The wall behind a hob and sink takes more splashing than anywhere else in the house. A tiled splashback wipes clean in seconds where painted plaster stains and eventually needs redoing. Choosing a wall colour grout rather than white keeps it looking fresh for far longer.

Kitchen walls are full of obstacles. Sockets, switches, extractor ducts and the ends of wall units all have to be cut around cleanly. We set out so the tile joints line up sensibly with the sockets and the cuts are made to fit the face plates, so the edges disappear when the plates go back on.
Metro tiles are still the most asked for, laid in a brick bond or stacked straight for a more modern look. Herringbone gives more movement in a plain kitchen. Large format porcelain gives a near seamless run with hardly any grout. Patterned tiles work well behind a hob on their own.

Most run from the worktop up to the underside of the wall units, usually around 45 to 60 centimetres. Behind a hob with no unit above, taking the tiles higher protects the wall from heat and splashes. On an open wall, stopping at the same height as the neighbouring units looks tidiest.
Yes, that is how nearly all of them are done. The tiles sit on the worktop and the joint between the two is siliconed rather than grouted, so the worktop can move slightly without cracking anything. Nothing needs taking out, so most kitchens are done in a day.
A mid grey or a colour close to the tile hides cooking marks better than brilliant white, which shows every splash behind a hob. If you want the crisp look of white grout, an epoxy grout resists staining much better than standard cement grout, though it costs more to fit.
