Can you plaster a living room while we still use it?

Yes, for a skim. Furniture moves to the middle and gets covered, and the room is usable again by the evening, though it will be damp for a couple of days. A full replaster back to brick is dustier and easier with the room emptied. We will say which one your walls need.

Should the ceiling be plastered at the same time as the walls?

It usually works out cheaper and looks better if it is. Doing the walls only leaves a visible line where new plaster meets an older ceiling, and you will be redecorating the whole room anyway. If the ceiling is sound and already flat, walls alone is a reasonable choice.

Can you plaster over coving or should it come off?

We plaster up to it and finish neatly against the edge, which keeps original coving intact. If the coving is damaged, painted thickly or you want it gone, it is easier to remove before plastering than after. New coving can be fitted once the plaster has fully dried.
