Chimney breasts and alcoves have more corners in a small space than anywhere else in the house. Each internal angle has to be run straight and each external angle beaded, or the shelving that goes in afterwards will not sit right. It is slower work and it shows if it is rushed.
Most living rooms are still in use while the work happens. Furniture goes to the middle and gets sheeted, doorways are covered, and floors are protected. Skimming is far cleaner than hacking off. We clear up at the end of each day rather than leaving it until the job is finished.

Yes, for a skim. Furniture moves to the middle and gets covered, and the room is usable again by the evening, though it will be damp for a couple of days. A full replaster back to brick is dustier and easier with the room emptied. We will say which one your walls need.
It usually works out cheaper and looks better if it is. Doing the walls only leaves a visible line where new plaster meets an older ceiling, and you will be redecorating the whole room anyway. If the ceiling is sound and already flat, walls alone is a reasonable choice.
We plaster up to it and finish neatly against the edge, which keeps original coving intact. If the coving is damaged, painted thickly or you want it gone, it is easier to remove before plastering than after. New coving can be fitted once the plaster has fully dried.
